This GCSE course provides a vocational based
qualification. It gives students the
opportunity to develop skills and knowledge
in a vocational area and can form the basis
for progression to further education,
training and employment. The course will
involve theoretical and practically applied
aspects of catering and students who have
part time jobs in the catering environment
will find it beneficial.
This qualification will help in developing
an understanding of effective organisation
and management of the catering industry. It
will also introduce advances on technology
and scientific knowledge which
benefit the industry and customers alike.
The certificate is a single award GCSE
graded on the A* to G scale made up of five
modules of work over a two year period plus
two, examination board set, three hour
controlled practical assessments – one in
each year and a final examination.
Entry to this course will be via discussion
with Allertonshire and College staff and
will suit students interested in the
catering or food industries. All students
who apply for this course must understand
that they must purchase their own aprons and
bring required ingredients on a weekly
basis.

Basic Food Hygiene.
Key Skills in Catering.
The Catering Industry.
Menu Development and Planning.
Examination Preparation.
Two three hour ‘Controlled Assessment’
Practicals.
Assessment
Controlled Assessment 1 – 20%.
Controlled Assessment 2 – 40%.
Final Examination – 40%.
Progression
This qualification will enable progression
to further education, ‘A’ level, training or
employment.
